Angel Hair and Crawfish Tails |

Ingredients:

Sauté onion, bell peppers, eggplant, and garlic in 3 tbls butter. Add flour and cook one more minute. Add wine, broth, and lemon juice. Cook until liquid is reduced by about 1/2. Turn heat to low and slowly add whipping cream. Add all spices and continue to cook low for about 10 minutes. Add 1/2 the Ramano and the crawfish tails. Cook for 10 more minutes. Serve over Angel Hair and top with remaining parmesean. |
