Angel Hair and Crawfish Tails



Ingredients:

  • 1/2 jullienned green bell pepper
  • 1/2 jullienned red bell pepper
  • 1/2 jullienned yellow bell pepper
  • 1/2 cup jullienned eggplant
  • 3 cloves minced garlic
  • 3/4 stick of butter
  • 2 tbsp flour
  • 1/4 cup dry white or dry sherry
  • juice from 1 lemon
  • 1/2 cup chicken broth
  • 1/2 pint whipping cream
  • 2 bay leaves
  • pinch of thyme
  • tsp tabasco
  • several dashes of lea & perrins
  • 1/4 cup ramano cheese
  • 1 1 lb pkg crawfish tails
  • 1 pkg angel hair pasta
  • salt & pepper


Sauté onion, bell peppers, eggplant, and garlic in 3 tbls butter. Add flour and cook one more minute. Add wine, broth, and lemon juice. Cook until liquid is reduced by about 1/2. Turn heat to low and slowly add whipping cream. Add all spices and continue to cook low for about 10 minutes. Add 1/2 the Ramano and the crawfish tails. Cook for 10 more minutes. Serve over Angel Hair and top with remaining parmesean.
