Vegatable Soup



Ingredients:

  • 2 lbs chuck roast or stew meat cut in 1 inch cubes
  • 3 stalks celery, diced
  • 3 large carrots, diced
  • 12 cups beef stock or water
  • 2 medium onions, diced
  • 1 - 14.5 oz can diced tomatoes
  • 1/2 cup chopped parsley
  • 1/2 tsp basil
  • 1/2 tsp thyme
  • 1/2 tsp pepper
  • 1 1/2 tsp salt
  • 1 - 10 oz pkg frozen lima beans
  • 1 - 10 oz pkg frozen corn
  • 1 - 10 oz pkg frozen green beans


About 3 hours before serving, add 10 cups water/broth, meat, salt, and pepper to a large pot on hight heat. When boiling, reduce heat to low and add remaining ingredients, except frozen vegetables. Cover and simmmer for 2 hours. Stir in frozen vegetables and cook for an additional 30 minutes or until all vegetables are tender. Serve wtih small pasta like acini pepe or alphabet.
